These low sodium hash browns are a quick and delicious breakfast or brunch recipe: shredded potatoes with onion, pepper, & spices. These baked hash browns are a simple one-pan recipe ready in no time.

Baked hash browns are a fantastic no-salt-added weekend brunch option!  Serve up these easy breakfast potatoes with low sodium scrambled eggs, low sodium baking powder biscuits, or an easy green smoothie.

These low sodium hash browns are the best brunch side dish, great for an easy weekend meal!  We make these hash browns a few times a month, they are great for serving with jammy poached eggs. Ready in 45 minutes, these easy hash browns are loaded with flavor without any added salt.

These are super quick and easy, crispy and crunchy, I use salt-free frozen hash browns instead of shredding the potatoes myself.  I like roasting onion and bell pepper with my hash browns – it gives each bite a little variety.

  • No Salt Added Hash Browns: I love hash browns, they are one of my favorite ways to eat potatoes.  I like to buy frozen hash browns for this recipe, as they are inexpensive and way more convenient than shredding your own potatoes. Make sure you can find salt-free hash browns, as many store brands have added salt, “seasonings”, and preservatives which up the sodium content.
  • Olive Oil
  • Onion
  • No Salt Steak Spice: Our favorite spice blend,  probably the one we use most in our home! This Steak Spice is a blend of garlic, pepper, oregano, crushed pepper flakes, and a little dill for an amazing flavor.  Great for potatoes, meat, vegetables, pretty much anything!
  • Bell Pepper – I used a mix of yellow and green bell peppers, but you can add red or orange peppers, any color you have on hand. Or use frozen peppers!
  • Garlic Powder & Onion Powder
  • Fresh Parsley: to garnish and to give the potatoes a nice freshness

How To Make This Recipe

  1. Preheat oven to 425 degrees Fahrenheit.
  2. On a sheet pan, add the hash browns, olive oil, onion, bell pepper, and salt-free steak spice. Toss well so all ingredients are mixed and well combined.
  3. Bake for 20 minutes.  Remove pan from oven, flip the hash browns, and place back in oven. Turn heat down to 375 degrees Fahrenheit and bake for an additional 10 minutes.
  4. Remove pan from oven and sprinkle with fresh parsley, serve and enjoy hot.

  • This recipe is gluten free, but be sure to check all the ingredients (like your spice blend, frozen potatoes, or toppings) just in case, to make sure everything is certified GF.

Ingredients
  

  • 1 lb bag frozen hash browns
  • 2 tablespoons olive oil
  • ½ cup sweet onion sliced
  • 1 bell pepper sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt free steak spice
  • ½ cup fresh parsley

Instructions
 

  • Preheat oven to 425 degrees Fahrenheit.
  • On a sheet pan, add the hash browns, olive oil, onion, bell pepper, garlic powder, onion powder, and salt-free steak spice. Toss well so all ingredients are mixed and well combined.
  • Bake for 20 minutes.  Remove pan from oven, flip the hash browns, and place back in oven. Turn heat down to 375 degrees Fahrenheit and bake for an additional 15 minutes until crispy.
  • Remove pan from oven and sprinkle with fresh parsley, serve hot.
