This loaded toast is a great weekend brunch, piled high with fresh fruit and creamy low salt ricotta cheese. A fantastic breakfast recipe to make with any fruit that is in season.

This fig and honey ricotta toast recipe is the perfect breakfast when you want something a bit decadent but also want it in 5 minutes. Your ricotta toast can be piled high with in-season fruits, and is loaded on creamy and sweet low-salt ricotta. Drizzle some honey on top and breakfast is served.
I made this version of low salt ricotta toast with figs (which I happened to have in the fridge) but almost any fruit would be fantastic!  Strawberries, raspberries, cantaloupe, pineapple, or peaches would be fantastic substitutes.  I use a low-salt ricotta which I will link to below, or if I happen to have extra milk I make my own!  My recipe is easy and just two ingredients (milk + vinegar) and you have fresh ricotta in no time!

Low Sodium Breakfasts Everyone Will Love

Making low sodium ricotta toasts can be great for a quick cozy weekend breakfast, brunch, or brinner (breakfast for dinner!).  They are the perfect recipe for brunch guests, or just for getting the whole family together to enjoy a healthy weekend meal. These toasts are also great for having company over for a holiday brunch as well. You can add a variety of fruits and nuts as toppings for your guests to mix and match as they please.

You can see all my low sodium breakfast and brunch recipes here. A simple and salt-free healthy meal will be ready in no time.

What’s In This Low Sodium Toast Recipe?

I love shopping for fresh produce through Misfits Market – they sell groceries, healthy pantry staples, and fantastic food finds (like meat and dairy) at a discounted price. Choose what goes into the box, save up to 40% off grocery store prices & save time with free delivery to your door!

  • Fruit – I used figs because I happen to have them on hand – but you can use almost any fruit you love that is in season!  Great options are: strawberries, black berries, raspberries, blueberries, cantaloupe, pineapple, peaches, pears, or anything delicious and ripe!
  • Bread – see our options below for our favorite low sodium breads.
  • Low Salt Ricotta Cheese I love enjoying a low salt ricotta with lasagnas, pasta bakes, or just spread on toast with a drizzle of honey and fruit. This ricotta has just 50mg of sodium for a ¼ cup serving! You can even make your own ricotta (all you need is milk, vinegar, and cheesecloth), by following my easy recipe here.
  • Walnuts: because I love adding heart-healthy and brain-healthy ingredients to my foods when I can. I stocked up a few bags of these walnuts which are super cheap and a great value for the quality.
  • Raw Honey: I love how tasty this honey is drizzled over the toast.  I’d recommend trying a local farmers market to find the best raw honey in your area (support your local beekeepers!). Or else, this raw organic honey online here is the next best thing.

What’s the Best Low Sodium Bread?

It can be so difficult to find low sodium bread at the store!  When I can’t find any low salt bread, I love making my own so I know exactly how much sodium goes into it. Here are a few of our favorite low sodium bread options.

  • Ezekiel breads – Ezekiel breads come in a few different flavors, and can be found in the frozen section of your supermarket. Our favorites are their sprouted bread which is 75mg sodium per slice and the flax bread which is 70mg sodium per slice.
  • No Salt Added Bread – you can buy this no-salt-added bread online here which has no salt added and only 5mg sodium per slice!
  • Homemade overnight no-knead bread – this is one of my favorites, we make this almost every weekend!  Don’t let homemade bread intimidate you, it couldn’t be simpler – it’s just flour, salt (or salt substitute), yeast, and water.  Let it rise overnight, and bake in the morning – recipe here!
  • Low sodium whole wheat bread – I love my whole wheat bread recipe here for sandwiches and toast.
  • Low Sodium Brioche – this makes fantastic ricotta toast or French toast!  It’s sweet, great for beginner bakers, and ready in a few hours.
  • Low Sodium Cornbread – another favorite of ours, this easy cornbread is great to enjoy with soups and low sodium chili

How Do I Make Sweet Honey Ricotta Toast with Figs?

  1. Toast your favorite low salt bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with low salt ricotta in a thick layer, I used about 1/4 cup of ricotta per slice.
  2. Add sliced fruit, crushed walnuts, and a drizzle or honey on each toast.
  3. Add any additional toppings you love – like nuts or seeds, a sprinkle of cinnamon, etc. Enjoy!
