These low sodium croutons are simple to make and loaded with garlic and herbs! Toast up some croutons tossed in olive oil and your favorite spices for a quick and easy addition to your next meal. Great on salads, soups, or just eaten by the handful.

This low sodium croutons recipe is a fantastic way to use up stale bread, for a great no waste recipe. See below for tips on our favorite low sodium breads to use!

Toss some major flavor into your next salad with these great homemade low sodium croutons! You can use your favorite store-bought low sodium bread, but I like to use my easy no knead low salt bread which we usually have a loaf of on the counter.

When I have extra bread that is getting stale, these garlic & herb croutons are the perfect way to breathe new life into old bread.  Just toss with bold flavorful spices, bake, and enjoy fresh croutons straight out of the oven or air fryer!

What’s In These Low Sodium Croutons?

  • Low Sodium Bread – see the next section below for some great low sodium, no salt, and reduced salt options.
  • Extra Virgin Olive Oil
  • Italian Seasoning Blend: usually has thyme, basil, rosemary, parsley, etc. Make sure you get a no-salt-added variety!
  • Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love garlic powder and add it to a lot of recipes that I would use fresh garlic in too.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.

What’s the Best Low Sodium Bread?

It can be so difficult to find low sodium bread at the store!  When I can’t find any low salt bread, I love making my own so I know exactly how much sodium goes into it. Here are a few of our favorite low sodium bread option – both store-bought and homemade.

  • Ezekiel breads – Ezekiel breads come in a few different flavors, and can be found in the frozen section of your supermarket. Our favorites are their sprouted bread which is 75mg sodium per slice and the flax bread which is 70mg sodium per slice.
  • No Salt Added Bread – you can buy this no-salt-added bread online here which has no salt added and only 5mg sodium per slice!
  • Homemade low sodium no-knead bread – this is one of my favorites, we make this almost every weekend!  Don’t let homemade bread intimidate you, it couldn’t be simpler – it’s just flour, salt (or salt substitute), yeast, and water.  Let it rise overnight, and bake in the morning!
  • Low sodium whole wheat bread – I love my whole wheat bread recipe here for sandwiches and toast.
  • Low Sodium Brioche – this makes fantastic ricotta toast or French toast!  It’s sweet, great for beginner bakers, and ready in a few hours.
  • Low Sodium Cornbread – another favorite of ours, this low sodium cornbread is great to enjoy with soups and low sodium chili.

How To Make This Recipe

  1. Set the oven broiler to low. Place a baking rack is the center if the oven.
  2. Cube the bread into small 1/2 inch cubes, add to a large mixing bowl.
  3. To the bowl, add the olive oil, Italian seasoning, garlic powder and onion powder. Mix well until bread is coated in oil and spices, and place the bread in an even layer on a baking sheet. Place the baking sheet on the middle rack in the oven.
  4. Bake over low broiler for about 3 minutes, then flip and broil for another 2-3 minutes on the other side.
  5. Depending on the heat of your broiler it may take less (or more) time so pay close attention when the croutons are in the oven so they do not burn.
  6. Once the croutons turn a golden brown, remove from oven and allow to cool. Top on soups or salads… Or just eat a handful as a snack.  Yep, they are that good!

Or Make These Croutons in an Air Fryer

Follow steps 2 & 3 above. Add the croutons to your air fryer basket, and cook at 350 degrees Fahrenheit for 5 minutes.
