This Low Sodium Salsa Verde recipe is a bright, fresh, and spicy homemade green salsa that’s easy to make in your blender with fresh tomatillos. This salsa verde (green salsa) is healthy & naturally low in sodium but big on flavor!

Great to enjoy as a dip for fresh tortilla chips, to top your huevos rancheros, or to add into your next taco night.

This Low Sodium Salsa Verde was the perfect recipe to make this summer with our tomatillo harvest from the garden. This was our first time planting tomatillos and they absolutely exploded and took over our garden beds. Our friend Vero gave us her family’s tomatillo salsa recipe and we couldn’t wait to make a low sodium/salt free version of it!

I had never made homemade salsa before, and I am a total convert. It was so simple, and the result was perfectly spiced salsa. I boiled the tomatillos and some vegetables, added them to a blender with fresh cilantro and peppers. This is a fantastic salsa for anyone looking to enjoy low sodium recipes, no salt added!

This tomatillo salsa Verde recipe is the perfect way to use those extra garden tomatillos.  Throughout the summer our garden is overloaded with tomatillo plants all ripening at once.  I make this garden fresh salsa recipe with my extra green tomatillos and a healthy dip is ready in no time.

How Do I Make Salsa Without Salt?

  1. In a medium sized pot, add the tomatillos, half the onion, half the garlic, the jalapenos to the pot. Pour in enough water to just cover the tomatillos. Bring to a boil, then reduce to a simmer and simmer for 15 minutes until the tomatillos are soft.
  2. Strain the vegetables out of the pot and add to a blender. Save the cooking water in case you need to thin the salsa.
  3. To the blender add all the cooked vegetables, and the remaining 1/2 chopped onion, the 3 cloves of garlic, and the fresh chopped cilantro.  Blend on low speed and work up to high speed so the salsa is completely blended. Thin with 1 tablespoon of the vegetable cooking water if desired.
  4. Serve with fresh corn tortilla chips or enjoy on top of burritos, taco bowls, and beans and rice.

The Best Blender for Salsa

I’ve owned a lot of blenders, but my Vitamix blender is definitely the best. This high-speed blender will blend even the toughest of ingredients into pulp.  I prefer using my blender for recipes like this, as it’s simple to clean the blender afterwards.

Great for making all kinds of low so sauces, smoothies, or recipes like this. This is definitely one kitchen appliance we use on a daily basis!

Ingredients
  

  • 12 tomatillos husks removed
  • 2 to 3 cups water
  • 1 sweet onion chopped, divided
  • 6 cloves garlic
  • 3 jalapenos seeds removed for milder flavor
  • 1 bunch cilantro stems removed

Instructions
