This low sodium Potatoes O’Brien recipe is a great side dish made with cooked potatoes sauteed in unsalted butter, garlic, onions, bell peppers, and spices. A fantastic no-salt-added recipe you can enjoy alongside your favorite protein.

These easy low sodium potatoes are hearty, filling, and flavorful – and great to enjoy all year round. I love serving these potatoes with low sodium BBQ chicken, low sodium steaks off the grill, or even for breakfast with no-salt-added scrambled eggs.

If you’re looking for a salt-free side dish, these delicious flavorful potatoes are a fantastic choice to serve up with dinner! I made these for my family (who aren’t low so) and they raved about them, even with no salt added.

I boil small potatoes, then toss them in butter and garlic, and sauté everything up with peppers and onions. Top these potatoes with lemon juice and parsley, and enjoy! You can enjoy them plain, or dip them in some light sour cream too.

Low Sodium Potato Recipes

Potatoes are naturally low in sodium – they naturally contain 5mg of sodium per a 100 ounce serving. Potatoes contain potassium and can be a good source of Vitamin C if you enjoy them with the peels on.

Potatoes are one of our favorite staples on a low sodium diet. We love making crispy low sodium fries, making garlic no-salt-added mashed potatoes,  and making twice baked potatoes for a low salt side dish.

What Ingredients Do I Need for Potatoes O’Brien?

  • Potatoes – I used small yellow mini potatoes for this recipe. If you can find mini or fingerling potatoes, they are excellent in this dish! If you can’t find them, regular yellow potatoes or red potatoes work just as well.
  • Unsalted Butter  – we only use unsalted butter in all our recipes, it’s a great way to cut down on your salt & sodium intake with a simple swap.
  • Garlic – which adds a great flavor!
  • Onions – I used a sweet Vidalia onion, but any yellow, white, or red onion works in this recipe.
  • Bell Peppers – I used a frozen tri-pepper blend of green, yellow, and red bell peppers.
  • Parsley
  • Red Chili Flakes: for a little heat! I like to add a few shakes
  • Lemon

How To Make This Recipe

  1. Place sliced potatoes in a large pot. Cover with cold water, enough to cover the potatoes by 1 inch. Bring to a boil, and cook for 10-15 minutes until potatoes are fork tender. Drain and set aside.
  2. In a pan or skillet, heat the butter over medium heat. Add the garlic, onions, and bell pepper, and sauté for 6 to 7 minutes until softened.
  3. To the pan, add the cooked potatoes from the first step, and mix well to combine. Sprinkle in the Italian seasoning, red chili flakes, and squeeze in the lemon juice. Toss well and sauté for a few more minutes until potatoes start to brown.
  4. Remove potatoes from heat, and add the fresh parsley. Serve hot! These potatoes are a great side dish for breakfast, lunch, or dinner.

Ingredients
  

  • 1.5 lbs yellow potatoes (I used mini potatoes) diced into 1 inch cubes
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • ½ large onion chopped
  • 1 cup bell peppers chopped, I used a mix of green, yellow, and red peppers
  • ½ teaspoon red chili flakes
  • ½ teaspoon salt free Italian seasoning
  • 1 tablespoon lemon juice from one half lemon
  • ½ cup parsley chopped
