It’s a great side dish, naturally low in sodium. Serve with low sodium tacos, low sodium chicken fajitas, low sodium refried beans, or a burrito bowl, and enjoy.
Cilantro lime rice has always been a favorite of mine, and I wanted to make a simple and tasty recreation without using added salt. I love adding cilantro lime rice to my burrito bowls, or serving it up with some salt-free refried beans for Taco Tuesday.
What I love about this recipe is that everything comes together in one pot – no fancy equipment needed. In just about 30 minutes, you can have a super flavorful and simple side dish for your next dinner!

What’s In This Cilantro Lime Rice without Salt?

- Fresh Cilantro – one bunch is more than enough for this tasty recipe. If you don’t love cilantro, but still want an fresh and herby flavor, I recommend using parsley instead.
- Fresh Limes – highly recommend using fresh lime juice, and not bottled lime. It makes a huge difference in the flavor of this rice. I find that bottled lime juice can sometimes taste bitter, so juicy fresh limes are what I always use when making this dish.
- Jasmine Rice – I like to use this fantastic jasmine rice, which has a little extra flavor than normal white rice. The long grains are perfect for this side dish.
- Unsalted Butter – for a little flavor and fat, with no added salt.
- Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
- Garlic Powder – for a little extra savory flavor.

This salt free cilantro tice recipe is what I call an Easy Entertaining Dish- which is on your table in about 30 minutes. These quick and simple recipes are perfect for last-minute dinners, or when you just want a tasty home cooked meal but don’t want to spend hours in the kitchen.

How To Make This Recipe
- Rinse the rice under cold water, until the water runs clear. Drain well, and set aside.
- In a medium pot, heat the unsalted butter over low heat. Add the onions and garlic, and saute for 3 minutes. Add the drained rice, and saute for 4 more minutes.
- Add the water to the rice, and stir well. Cover the rice, and continue to cook on low heat for 20 minutes.
- Remove pot from heat, and allow it to sit (still covered) for 10 more minutes so the remainder of the water is absorbed.
- Once the rice has finished cooking, remove the lid, and fluff with a fork. Add the fresh lime juice and the chopped cilantro, and red pepper flakes if using, and stir well to combine.
- Serve hot with no-salt-added beans, in a burrito or burrito bowl, or with tacos. Store leftovers in an airtight container for up to 2 days.

- 1 ½ cups white rice I used jasmine long-grain rice

- 2 cloves garlic minced
- 2 ¼ cups water or sodium free vegetable stock
- 3 limes juiced, about 5-6 tablespoons
- 1 cup fresh cilantro chopped
- ¼ teaspoon red pepper flakes optional for heat
