This low sodium baked potato recipe is crisp on the outside, tender the in the middle, and loaded with your favorite salt-free toppings! A simple salt-free side dish great all year long.

The secret to perfect baked potatoes is halfway during cooking to flip them and coat them in oil for a perfectly crisp potato. Top with chives, green onions, unsalted butter, or sour cream.

The perfect side dish to serve with low sodium steaks, sweet & savory low sodium apricot chicken, or low sodium pork tenderloin!

Potatoes are one of our favorite foods: they’re inexpensive, naturally low in sodium, and there are so many amazing ways to cook them. And nothing is better than a classic baked potato, made with tasty low sodium toppings.

These tasty baked potatoes are light, fluffy, and SO good! Start by rubbing the potatoes in olive oil, baking them to perfection, and adding on your favorite toppings.

This is one simple side dish that goes great with almost any dinner! And it’s great to enjoy all year long.

Low Sodium Potato Recipes

Potatoes are naturally low in sodium – they naturally contain 5mg of sodium per a 100 ounce serving. They contain potassium and can be a good source of Vitamin C if you enjoy them with the peels on.

Potatoes are one of our favorite staples on a low sodium diet. We love making crispy oven-baked fries, making garlic mashed potatoes,  and making twice baked potatoes for a low salt side dish.

Ingredients for These Low Sodium Potatoes

Potatoes

I used Russet potatoes, which are my recommended potato for making baked potatoes. They have a deep dark flesh, and the inside is light and fluffy. They are perfect for baking!

You could also try this recipe with other varieties of potatoes, but I find that Russet potatoes always come out the best.

Olive Oil

I like rubbing the outside of the potatoes with a little extra virgin olive oil to crisp up the skin. This step is optional, but I find well worth it!

If you don’t have olive oil, you can also use a light neutral oil like sunflower oil or vegetable oil.

Unsalted Butter

I always top my baked potatoes with unsalted butter, which give them a wonderful richness!

Chives

A classic on baked potatoes, chives make a great garnish. They add a onion-y and garlicky flavor, full of freshness!

Green Onions

I also like using green onions to top my baked potatoes.

Sour Cream

Optional, but highly recommended – I love the thick richness of sour cream, which enhances each bite of these tasty potatoes. Most sour cream varieties are low in sodium, making it a great choice as a topping!

How To Make Baked Potatoes Without Salt

  1. Place a rack in the center of the oven and preheat it to 400 degrees Fahrenheit.
  2. Thoroughly wash the potatoes, and poke each potato all over with a fork fork.
  3. Rub each potato with a bit of olive oil until it’s coated.
  4. Place the potatoes on a wire rack or on a baking sheet. Bake until you can easily slide a fork or skewer into the center of the potato, 40 to 50 minutes. The baking time will depend on the size of your potatoes.
  5. To serve, slice down the center of a potato with a knife and and pry it open. I like to dig my fork in and fluff the inside of the potatoes before serving. Add the unsalted butter, green onions, chives, and/or sour cream if desired. Serve hot!
  6. Let leftover potatoes cool, wrap them in foil and refrigerate for up to 3 days.
