This low sodium queso cheese dip has surprising ingredients – and none of them are real cheese! Processed cheeses (especially process American cheese, or cheese loafs) can be very high in sodium content, making traditional queso dip off limits for those watching their sodium intakes. Not anymore!
This low sodium queso uses a few ‘tricks’ to make a creamy & irresistible dip that has the flavor of queso, without any actual cheese. Blend together cashews, garlic, chilis, and spices for a fantastic salt free dip that tastes close to the original with very little sodium!

- Cashews: I love raw unsalted cashews as the base in this recipe – there’s no need to get roasted cashews, since everything will be blended together!
- Milk or Cream
- Lime Juice
- Cumin – for a delicious savory spice that bring classic taco seasoning flavor.
- Jalapenos: fresh jalapenos are preferred for this dip
- Chili Powder: for a really nice flavor in this dip – the chili powder isn’t spicy but will give you a rich and bright flavor.
- Smoked Paprika: give an additional depth of flavor to this dish.
- Fresh Cilantro, optional to top
How To Make This Recipe
- Place the cashews in a heat proof dish, and pour in the boiling water. Soak the cashews for 15 minutes until they begin to soften.
- Drain and add cashews to blender along with the rest of the ingredients. Blend on high for 1-2 minutes until the cashews have completely broken down and the queso has become thick and creamy.
- Taste and adjust seasoning as necessary: adding more jalapeños, smoked paprika, lime juice if needed.
- Serve as a dip for tortilla chips, on tacos or burritos, or use as a spicy veggie dip, enjoy!

- 1 cup cashews raw and unsalted
- 1 cup hot water
- 1 cup almond milk
- 1 tablespoon nutritional yeast
- 1 jalapeno chopped
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon turmeric
- 1 lime juiced
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika plus extra for garnish
- Fresh Cilantro optional to top

This recipe makes about 2 cups of queso, so for 6 servings, it would be 1/3 of cup per serving. I just had this last night with chips, and it was delicious!
