I recently had some fantastic lettuce wraps as an appetizer at one of my favorite restaurants, Cisco Brewers, and had to make a low sodium version at home! Super flavorful ground chicken and vegetables are simmered in a unsalted peanut butter sauce, and scooped into fresh lettuce cups.
While traditionally served as an appetizer, you could also make these lettuce cups as a side dish, a lunch, or bring them to a potluck or a party! They’re simple to make, fun to eat, and have SO much flavor in every bite.

An Easy Low Sodium Appetizer
Whether you are cooking these tasty lettuce cups as low sodium appetizer for yourself or for loved ones, these are a major crowd pleaser! The chicken mix has so much flavor in each bite, you won’t even realize it’s low in sodium.

Chicken
I used a lean ground chicken breast for this recipe. It cooks quickly and has a great texture! Make sure you buy chicken that has a nutrition label so you can see exactly how much sodium is the chicken. Mine had 100 mg sodium per 4 ounce serving.
Vegetables
I sauteed up some onion (you can use white, yellow, or red onion, whichever you prefer), red bell pepper which is fairly sweet, green onions, and carrots. To chop the carrots, you can shred them, grate them, spiralize them, or give them a small dice.
Lettuce
Boston lettuce or Bib lettuce is traditional for wraps. They have large green leaves, which are pliable when folding, so they won’t tear as easily. They keep the filling in well! If you can’t find Boston/Bib lettuce you can use romaine.
Creamy Peanut Sauce
Which I make with unsalted peanut butter, low sodium soy sauce (optional, you can skip it if desired), and fresh lime juice. The combination tastes great and gives the chicken and veggies a super creamy sauce that clings to each bite.
Unsalted Peanuts
For a garnish, I like to add some chopped unsalted peanuts to the top of the lettuce cups for a nice crunch!
How To Make Low Sodium Lettuce Wraps with Chicken
- In a large wok (or large pan), add the ground chicken, sesame oil, brown sugar, red pepper flakes, unsalted peanut butter, and low sodium soy sauce. Cook for 8-9 minutes over medium-high heat until chicken is cooked through and there is no pink.
- Reduce heat to medium, and add the carrot and green onions, and cook for 5 more minutes until vegetables begin to soften.
- Add the peanuts and stir to combine.
- Tear large leaves of lettuce from the stem, ensure they are washed and dried, and fill each piece of lettuce with about 1/4 cup of the filling.
- Top with extra crushed peanuts and green onions as a garnish. Enjoy!
Dietary Modifications
- This recipe is dairy free, and contains no dairy products.
- To make this recipe low carb, use an unsweetened peanut butter and omit the sugar.
- To make gluten free, ensure that the peanut butter and any jarred ingredients are certified gluten free before using.

- 1 lime freshly juiced
- 1 carrot grated, shredded, or spiralized
- 2 green onions sliced
- ¼ cup unsalted peanuts crushed, plus extra for garnish
- 1 head Bib lettuce Boston lettuce, or romaine leaves

For the Chicken Lettuce Wraps – Rice Wine Vinegar is listed in the ingredients but not mentioned in the directions. Am I correct in assuming it just goes in at the beginning with the chicken with the other ingredients? Thanks!
