This tasty low sodium dinner is a twist on Italian Caprese salad, a delicious classic flavor combination. Serve this tasty chicken dish over pasta with a side of low sodium garlic bread & a large family-style salad with low sodium balsamic vinaigrette.

No salt does not mean no flavor! And this unbelievable low sodium Caprese chicken recipe is here to prove it. With just 10 minutes of prep time and 30 minutes of cook time, this easy low sodium chicken dinner recipe is great any night of the week.

Start by placing your chicken breasts in a baking dish, whisking together a balsamic glaze, and baking the chicken with tomatoes and fresh low sodium mozzarella cheese slices. We gave this recipe a 10/10, my husband even have me a fist-bump after, it was so delish!

Ingredients You’ll Need

Chicken Breasts – Make sure you buy chicken with a nutrition label so you know exactly how much sodium is in your chicken.

Fresh Mozzarella Cheese – fresh mozzarella packed in water is usually lower in sodium than brick or shredded mozzarella (mine was 70mg sodium per 1 ounce serving).

Balsamic Glaze – i made a quick glaze with balsamic vinegar, extra virgin olive oil, garlic, mustard, and brown sugar. I poured it over the chicken, which ended up making a delicious sauce when mixed with the chicken juices when baked.

Fresh Tomatoes – I used large slicing tomatoes to top the chicken, ones that had been vine ripened. Use the freshest and juiciest tomatoes you can find, even in winter.

Fresh basil – A little fresh basil adds wonderful flavor when baked alongside the chicken, and also a fresh herby pop when sprinkled on top as a garnish.

Additions and Substitutions

  • You can also use chicken thighs instead of breasts if you prefer.
  • Make the balsamic glaze ahead of time, and marinate the chicken in it for up to 24 hours for extra flavor!
  • Swap the sweetener – instead of brown sugar you can use honey, white sugar, or even pure maple syrup.
  • Add a bit of heat! If you like your chicken a bit spicy, add 1/2 teaspoon red chili flakes into the balsamic mixture when making.

How To Make This Recipe

Step 1: Preheat the oven to 400 degrees Fahrenheit. Place the chicken breasts in a 13 x 9 inch baking dish, and set aside.

Step 2: In a medium bowl, add the balsamic vinegar, olive oil, fresh minced garlic, half the chopped basil (save the other half for garnish), mustard, brown sugar, and black pepper. Whisk well to combine.

Step 3: Pour the balsamic glaze over the chicken breasts. Use a spoon (or brush) to spread the sauce and cover each chicken breast.

Step 4: Slice your onions and tomatoes, and spread them around the dish. I covered each chicken breast with a few tomato slices, then tucked the remaining tomatoes and onions around the chicken in the dish.

Step 5: Bake chicken in the oven for 25 minutes. Carefully remove the baking dish, and top the chicken with the slices of cheese. Return to oven for 6-8 more minutes until cheese has melted.

Step 6: Chicken will be done with the internal temperature is 165 degrees Fahrenheit in the thickest part of the breast. Serve over pasta, brown rice, or with garlic bread for a tasty dinner!
