I love a good & quick cookie recipe when that late-night craving hits, or just when I want a sweet snack. These low sodium cookies come together super quickly and bake in just 12 minutes.
These cookies rely on some fantastic pantry staple ingredients like sugar and salt-free peanut butter. Pre-heat the oven, mix the ingredients, bake, and you have a tray of simple homemade cookies in no time.

- Unsalted Peanut Butter: I love unsalted peanut butter which has 0mg per serving. It’s great for these cookies, and also delicious for a quick sandwich or to make my favorite low sodium peanut noodles!
- Eggs – Eggs naturally contain about 65mg of sodium per large egg. We try to get cage free / free range eggs when we can. There isn’t any nutritional difference, but I always try to support animal welfare when I can!
- Granulated Sugar: I like this organic sugar for my recipes, but you can use any kind you have on hand.
The amazing thing about these cookies is that they are ready so quickly! I preheated the oven, and by the time it was ready, I had the dough made, formed, and the cookies ready on the baking sheet. Plus they use super friendly for those times when you haven’t been to the grocery store in a while. Perfect for rainy day baking.
What If I Don’t Have an Egg?
There are some fantastic pantry alternatives to an egg.
- Applesauce – substitute 1/4 of applesauce for each egg required in recipe.
- Flax ‘egg’ – a classic vegan baking hack, mix 1 tablespoon flaxseed meal with 2 tablespoons of water, let sit for 1 minute
- Corn Starch – mix 1 tablespoon corn starch with 3 tablespoons water for each egg in recipe
How To Make This Recipe
- Preheat oven to 350 degrees Fahrenheit (180 Celsius). Line a large baking sheet with parchment paper.
- In a large mixing bowl, add the peanut butter, sugar, and egg. Whisk until ingredients are well combined.
- Scoop about 1 tablespoon of dough, roll with hands, and place on the baking sheet. Repeat until dough is done.
- Once you have placed all the rolled dough balls on to the baking sheet, press down with a fork to form a tine pattern.
- Bake for 10-12 minutes until edges begin to brown, and remove from oven.
- Allow 10 minutes to cool before eating.

Delicious
These were delicious and really easy. Good texture and very peanut buttery with a good amount of sweet. My husband is quite excited to be able to have cookies that don’t eat up too much of his sodium value for the day. He is eating one now. 🙂 I am looking forward to trying more recipes from this site. Are the nutrition ingredients for the entire recipe or one cookie?
Do you think these could be taken out early and be indented and have a chocolate candy kiss put on top? Or would that be a problem? Have you tried it?
