Enchiladas have been on our menu a lot lately, especially when smothered in this fantastic low sodium enchilada sauce. It’s bold, spicy and tomatoey, and has a really wonderful flavor.

It’s super simple to make in just one pot, and takes less than 15 minutes! You can also make a double batch of the sauce and freeze half for another time too. Make dinner easy with this simple sauce!

The stars of this easy enchilada sauce recipe are all the wonderful salt-free spices! We use chili powder, cumin, onion powder, garlic powder, and oregano to build great flavor without salt.

We make a roux with unsalted butter and all-purpose flour to thicken the sauce.

And finally we start in a no salt added chicken broth and some unsalted tomato paste at the end to build wonderful flavor!

Additions and Substitutions

Instead of a no salt added chicken broth, you can make this recipe with a beef broth or a vegetable broth too. Or you can use a low sodium broth instead of a salt-free broth depending on your personal sodium limits. 

For a more garlicky flavor, feel free to use fresh chopped garlic instead of the garlic powder.

Be sure to check your chili powder to make sure it’s salt-free! A few varieties out there do contain added salt which increases the sodium amount… a good dark red chili powder should not have added salt.

Step 1: In a small pan, melt the butter and add the flour and mix well over low heat to make a roux. Cook for 1 minute.

Step 2: Add in the chili powder, cumin, onion powder, garlic powder, oregano, and stir well.

Step 3: Add in the broth and the tomato paste and whisk well until the sauce is smooth.

Step 4: Simmer for 5-6 minutes until the sauce is thick!

  • 2 tablespoons unsalted butter
  • 2 tablespoons all purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
