This delicious low sodium tomato salad is light, refreshing, and so flavorful – marinated in chopped garlic, herbs, and a quick 5-minute vinaigrette dressing. It’s a great summertime appetizer, salad, or side dish that everyone will love.

This is a great no-salt-added side, and a great use of fresh summer tomatoes and herbs. It takes just 15 minutes to make, or marinate the tomatoes overnight for a more intense flavor.

Summer is in full swing, and so are the delicious ripe and juicy tomatoes we have been getting! This no-salt-added tomato salad is a wonderful way to showcase tomatoes and fresh summer herbs together in a delicious side dish.

My dad used to make the best tomato salad growing up, and this is an elevated version with green onions, parsley, dill, and red onion. It doesn’t need any salt – there are amazing flavors from the simple herby dressing.

Ingredients You’ll Need

Use the ripest, juciest tomatoes you can find! If you are lucky enough to grow them in your garden, use those – or support your local farm stand or farmer’s markets in the area! If you are using store-bought tomatoes, look for Campari tomatoes, which are super sweet all year long. You can also make this with cherry tomatoes or grape tomatoes too, which are good winter-time choices. Same goes for our low sodium Caprese salad with fresh mozzarella – it definitely can be made all year long!

For the base of the dressing I use extra virgin olive oil and also white wine vinegar.

The dressing also contains loads of fresh herbs and vegetables: chopped garlic, green onions, fresh parsley, dill, and black pepper for a kick!

Additions and Substitutions

Fresh basil or cilantro would also be a great add-in to the fresh herbs.

Try this recipe with different vinegars! Balsamic vinegar, red wine vinegar, champagne vinegar, rice vinegar, or even plain white vinegar. You could also try this recipe with infused vinegars, too.

Add in other vegetables along with the tomatoes – sliced cucumbers and avocado would be great additions!

How To Make This Tomato Salad

Step 1: Slice the tomatoes, about 1/3 inch thick. Set them aside in a mixing bowl.

Step 2: In another small mixing bowl, add the olive oil, vinegar, chopped garlic, sugar, red onion, dill, parsley, and black pepper. Stir well to combine.

Step 3: Pour the dressing over the sliced tomatoes, and stir well to combine.

Step 4: Let the salad marinate for up to 30 minutes, flipping the tomatoes halfway. Serve immediately, and enjoy!

This low sodium tomato salad has 9mg sodium per serving, as it uses no salt and low sodium ingredients. If you buy or enjoy tomato salad from a restaurant or deli it may have added salt and the sodium will vary.

How to store this salad

Store any leftovers in an airtight container, and refrigerate for up to 2 days. You can marinate this overnight too for a more intense flavor.

What are other herbs you can use?

You can also add in fresh chopped basil, cilantro, or thyme in this recipe if desired.

Ingredients

  • 1 tablespoon sugar
  • 2 large cloves garlic minced
  • ¼ cup red onion minced
  • 1 tablespoon fresh dill chopped
  • 2 tablespoons fresh parsley chopped

Instructions
