This low sodium pickled onions recipe is a bright & fresh condiment or topping for your next dinner! Sweet, tangy, and a little spicy, these onions bring a ton of flavor to the plate without added salt.

These no-salt-added pickled onions are marinated in vinegar, sugar, and herbs for a delicious taste. I love adding a heaping spoonful on my low sodium chili, curry sauce & rice, or on a big burger with low sodium burger patties.

I love flavor additions like these amazingly delicious low sodium pickled onions, that are easy to make and bring big taste to any dish you put them on. We add them to chilis, soups, stews, any dinner imaginable and they bring a ton of flavor with no salt added.

I start by thinly slicing red onions (you could use white or yellow onions too), adding them with some jalapeño for some spice, the adding spices. I love the flavor of extra garlic and onion powder in the brine, but you can add any herbs or spices you love too!

30-Minute Unsalted Onion Pickles

If you’re looking for a quick weeknight flavor booster, this low sodium pickled onions recipe is the best condiment to make when you’re short on time. This easy one-dish side is made fast.

  • Onions – I used red onions, but you can use white or yellow if desired.
  • Jalapeno Pepper – for spice, and also some great fresh flavor.
  • White Wine Vinegar
  • Granulated Sugar
  • Garlic Powder: Also a major pantry staple ingredient that gets used in our house daily! I love garlic powder which has 0 added sodium, or you could add 1 teaspoon of minced fresh garlic too!

How To Make This Recipe

This is a quick-pickle recipe, which takes only minutes and lasts up to 2 weeks in the refrigerator. It’s not meant for long-term storage, but is a great perishable pickle when you want something quick & flavorful!

  1. Thinly slice the onions and jalapenos. Place them in a mason jar (I used a quart sized jar.)
  2. Add the white vinegar, which should just cover the onions. If it does not, add more to cover the onions. Add the sugar, and onion powder.
  3. Seal the jar with a lid and band, and shake well until the sugar and onion powder are combined.
  4. Refrigerate and use within 2 weeks.
