This low sodium apricot chicken recipe is a sweet and savory dinner idea, baked in the oven, and ready in about 30 minutes! Tender, juicy, and each bite is so flavorful without any added salt.

One of our favorite go-to low sodium dinner ideas, this easy baked chicken is coated with plenty of spices and flavorful apricot preserves. Serve with coconut lime rice, steamed vegetables, and a low sodium chopped salad for a complete meal!

I love a good sweet and savory chicken recipe, especially one that is super juicy and flavorful! This tasty apricot glazed chicken recipe is baked to perfection in the oven, with a sweet coating from spices mixed in with apricot glaze.

Chicken breasts can make a great low sodium dinner, especially when they are dressed with tasty spices and a little sweetness.

Serve this tasty apricot chicken with low sodium baked potatoes, a side of rice, roasted vegetables, or our favorite chopped salad!

Chicken Breasts

I used lean chicken breasts for this recipe. Make sure you buy chicken that has a nutrition label so you can see exactly how much sodium is the chicken. Mine had 80 mg sodium per 3 ounce serving.

Apricot Preserves or Jam

I used apricot preserves for this recipe, which made a fantastic coating on the chicken! A sweet glaze that I mixed spices into for a great flavor.

You can use apricot preserves or a regular apricot jam to get a nice flavorful spread for the chicken.

Spices

I used onion powder, garlic powder, black pepper and thyme for the glaze to give it a more savory flavor.

Extra virgin olive oil

I used EVOO as I always keep it on hand, however you could substitute a neutral oil like vegetable oil or sunflower oil instead if desired.

Fresh herbs

Finishing off this dish with fresh parsley and green onions was delicious! I love the added flavor of fresh herbs, which makes the chicken really pop.

Tips for Buying Low Sodium Chicken

I love finding new (& delicious!) ways to cook chicken. Chicken is an inexpensive protein, is great for easy lunches and dinners, and is so versatile – you can cook it many different ways! When buying chicken, make sure to find a low salt or sodium variety, as some chicken brands add a salt solution to texture the meat.

I recommend buying chicken that has a nutrition label on it, so you know the exact amount of sodium in the meat. Or check out your local butcher and ask them for low sodium options. And skip the rotisserie or pre-cooked chicken in the deli section – it can have added salt and sodium.

How To Bake Low Sodium Chicken with Apricot Preserves

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. In a large 13 x 9 inch baking dish, place chicken breasts in an even layer. Top each chicken breast with a drizzle of olive oil.
  3. In a small bowl, add the black pepper, garlic powder, onion powder, and apricot preserves. Mix to combine. Top each chicken breast with 2 tablespoons of apricot spread. Use the back of a spoon to smooth the preserves evenly over the surface of the chicken.
  4. Place the chicken in the pre-heated oven, and bake for 25-35 minutes (the thicker the chicken, the longer it will take), until the chicken reaches an internal temperature of 165 degrees Fahrenheit, which is cooked through.
  5. Once chicken is done, place on a serving plate and garnish with fresh parsley and green onions. Serve hot and enjoy.
  6. Store leftovers in an airtight container for up to 3 days.

  • ¾ cup apricot preserves

  • Fresh herbs for garnish, parsley or green onions
