Equipment

  • 13 x 9 baking dish
  • Small Mixing Bowl

Ingredients

  • 4 medium chicken breasts about 2 lbs of chicken
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon chili powder
  • ½ teaspoon smoked paprika
  • 4 teaspoons orange marmalade
  • 2 oranges sliced
  • ½ teaspoon black pepper
  • Fresh herbs for garnish, parsley or cilantro

Instructions

  • Preheat the oven to 425 degrees Fahrenheit. Thinly slice the oranges, with the peel on.
  • In a large 13 x 9 inch baking dish, add half of the orange slices in an even layer to the bottom of the dish (save the other half for garnish). Place chicken breasts on top of the oranges in an even layer. Top each chicken breast with a drizzle of olive oil.
  • In a small bowl, add the black pepper, garlic powder, chili powder, and paprika. Mix to combine. Pour 1 teaspoon of the mixture over each breast.
  • Over the spice mixture, spread 1 teaspoon of orange marmalade over each chicken breast. Use the back of a spoon to smooth the marmalade evenly over the surface of the chicken. For sweeter chicken, use a bit more marmalade if desired.
  • Place the chicken in the pre-heated oven, and bake for 25-35 minutes (the thicker the chicken, the longer it will take), until the chicken reaches an internal temperature of 165 degrees Fahrenheit in the thickest part of the chicken breast.
  • Once chicken is done, place on a serving plate and garnish with the remaining half of the orange slices. Serve hot and enjoy. Store leftovers in an airtight container for up to 3 days.
