Low Sodium Sweet and Sour Red Cabbage

This easy low sodium sweet and sour red cabbage recipe is a fantastic side dish to serve with your favorite protein. It's a little sweet, a little tangy, and a great colorful dish.

Ingredients
  

  • 2 tablespoons olive oil
  • 1 sweet onion sliced
  • 1 large apple chopped
  • 1.5 cup water
  • ¾ cup apple cider vinegar
  • 2 tablespoons sugar
  • 2 lb cabbage shredded
  • ½ teaspoon black pepper
  • 1 lemon juiced, about 1-2 tablespoons
  • 1 tablespoon all purpose flour

Instructions
 

  • In a large pot, heat the olive oil over low heat. Add the sliced onion and apple, and lightly brown for 4 to 5 minutes.
  • Pour in the water, apple cider vinegar, and sugar and stir well to combine. Add the shredded cabbage and black pepper to the pot, and stir well to combine.
  • Cover and simmer cabbage for 20 minutes, stirring occasionally.
  • Add the fresh lemon and the all purpose flour to the red cabbage, and it give it a final stir until flour has dissolved. Taste, and adjust vinegar or sugar level as needing, adding more to taste. Serve hot, and garnish with extra black pepper. Enjoy!

This recipe makes about 8 cups of cabbage - so each serving is for one 1-cup size. There should be 8 total.
