Low Sodium Ricotta Toast with Fruit & Honey

Ingredients
  

  • 4 slices low sodium bread see note below
  • 1 cup low salt ricotta cheese
  • 1 cup fruit chopped (I used figs)
  • ¼ cup walnuts crushed
  • 1 tablespoon honey

Instructions
 

  • Toast your favorite low salt bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with low salt ricotta in a thick layer, I used about 1/4 cup of ricotta per slice.
  • Add sliced fruit, crushed walnuts, and a drizzle or honey on each toast.
  • Add any additional toppings you love - like nuts or seeds, a sprinkle of cinnamon, etc. Enjoy!

What's the Best Low Sodium Bread?

It can be so difficult to find low sodium bread at the store!  When I can't find any low salt bread, I love making my own so I know exactly how much sodium goes into it. Here are a few of our favorite low sodium bread options.
  • Ezekiel breads - Ezekiel breads come in a few different flavors, and can be found in the frozen section of your supermarket. Our favorites are their sprouted bread which is 75mg sodium per slice and the flax bread which is 70mg sodium per slice.
  • No Salt Added Bread - you can buy this no-salt-added bread online here which has no salt added and only 5mg sodium per slice!
  • Homemade overnight no-knead bread - this is one of my favorites, we make this almost every weekend!  Don't let homemade bread intimidate you, it couldn't be simpler - it's just flour, salt (or salt substitute), yeast, and water.  Let it rise overnight, and bake in the morning - recipe here!
  • Low sodium whole wheat bread - I love my whole wheat bread recipe here for sandwiches and toast.
  • Low Sodium Brioche - this makes fantastic ricotta toast or French toast!  It's sweet, great for beginner bakers, and ready in a few hours.
  • Low Sodium Cornbread - another favorite of ours, this easy cornbread is great to enjoy with soups and low sodium chili
