Low Sodium Chicken Lettuce Wraps

These low sodium chicken lettuce wraps are a fantastic appetizer loaded with flavorful chicken, fresh crunchy vegetables, in a creamy tangy peanut sauce. Served in lettuce cups for a fantastic finger food or starter to your meal.

Ingredients
  

  • 1 lb ground chicken or other lean ground meat
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons sugar
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons unsalted peanut butter
  • ½ teaspoon low sodium soy sauce
  • 1 lime freshly juiced
  • 1 carrot grated, shredded, or spiralized
  • 2 green onions sliced
  • ¼ cup unsalted peanuts crushed, plus extra for garnish
  • 1 head Bib lettuce Boston lettuce, or romaine leaves

Instructions
 

  • In a large wok (or large pan), add the ground chicken, sesame oil, brown sugar, red pepper flakes, unsalted peanut butter, and low sodium soy sauce. Cook for 8-9 minutes over medium-high heat until chicken is cooked through and there is no pink.
  • Reduce heat to medium, and add the carrot and green onions, and cook for 5 more minutes until vegetables begin to soften.
  • Add the peanuts and stir to combine.
  • Tear large leaves of lettuce from the stem, ensure they are washed and dried, and fill each piece of lettuce with about 1/4 cup of the filling.
  • Top with extra crushed peanuts and green onions as a garnish. Enjoy!

This recipe makes about 8 lettuce wraps total, so the serving size here is for 1 lettuce wrap, or 1/8th of the total recipe!
