Low Sodium Cilantro Lime Rice

This Low Sodium Cilantro Lime Rice recipe is bright, fresh, herby, and ready for your next taco night or burrito bowl!  This salt free side dish can be cooked on the stove top, and is ready in about 30 minutes.

Ingredients
  

  • 1 ½ cups white rice I used jasmine long-grain rice
  • 2 tablespoons unsalted butter
  • ½ onion chopped
  • 2 cloves garlic minced
  • 2 ¼ cups water or sodium free vegetable stock
  • 3 limes juiced, about 5-6 tablespoons
  • 1 cup fresh cilantro chopped
  • ¼ teaspoon red pepper flakes optional for heat

Instructions
 

  • Rinse the rice under cold water, until the water runs clear. Drain well, and set aside.
  • In a medium pot, heat the unsalted butter over low heat. Add the onions and garlic, and saute for 3 minutes. Add the drained rice, and saute for 4 more minutes.
  • Add the water to the rice, and stir well. Cover the rice, and continue to cook on low heat for 20 minutes.
  • Remove pot from heat, and allow it to sit (still covered) for 10 more minutes so the remainder of the water is absorbed.
  • Once the rice has finished cooking, remove the lid, and fluff with a fork. Add the fresh lime juice and the chopped cilantro, and red pepper flakes if using, and stir well to combine.
  • Serve hot with no-salt-added beans, in a burrito or burrito bowl, or with tacos. Store leftovers in an airtight container for up to 2 days.
