Low Sodium Potatoes O'Brien

This low sodium Potatoes O'Brien recipe is a great side dish made with cooked potatoes sauteed in unsalted butter, garlic, onions, bell peppers, and spices. A fantastic no-salt-added recipe you can enjoy alongside your favorite protein.

Ingredients
  

  • 1.5 lbs yellow potatoes (I used mini potatoes) diced into 1 inch cubes
  • 2 tablespoons unsalted butter
  • 3 cloves garlic minced
  • ½ large onion chopped
  • 1 cup bell peppers chopped, I used a mix of green, yellow, and red peppers
  • ½ teaspoon red chili flakes
  • ½ teaspoon salt free Italian seasoning
  • 1 tablespoon lemon juice from one half lemon
  • ½ cup parsley chopped

Instructions
 

  • Place sliced potatoes in a large pot. Cover with cold water, enough to cover the potatoes by 1 inch. Bring to a boil, and cook for 10-15 minutes until potatoes are fork tender. Drain and set aside.
  • In a pan or skillet, heat the butter over medium heat. Add the garlic, onions, and bell pepper, and sauté for 6 to 7 minutes until softened.
  • To the pan, add the cooked potatoes from the first step, and mix well to combine. Sprinkle in the Italian seasoning, red chili flakes, and squeeze in the lemon juice. Toss well and sauté for a few more minutes until potatoes start to brown.
  • Remove potatoes from heat, and add the fresh parsley. Serve hot! These potatoes are a great side dish for breakfast, lunch, or dinner.
