This low sodium queso recipe is a tasty appetizer or snack, a great salt-free dip! This healthy salt-free queso is made with cashews, garlic, jalapeño, lime, and cilantro for a great flavor without salt.

Ingredients
  

  • 1 cup cashews raw and unsalted
  • 1 cup hot water
  • 1 cup almond milk
  • 1 tablespoon nutritional yeast
  • 1 jalapeno chopped
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon turmeric
  • 1 lime juiced
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika plus extra for garnish
  • Fresh Cilantro optional to top

Instructions
 

  • Place the cashews in a heat proof dish, and pour in the boiling water. Soak the cashews for 15 minutes until they begin to soften.
  • Drain and add cashews to blender along with the rest of the ingredients. Blend on high for 1-2 minutes until the cashews have completely broken down and the queso has become thick and creamy.
  • Taste and adjust seasoning as necessary: adding more jalapeños, smoked paprika, lime juice if needed.
  • Serve as a dip for tortilla chips, on tacos or burritos, or use as a spicy veggie dip, enjoy!
