This low sodium mole sauce recipe is rich and spicy, made with peppers, onions, spices, cacao powder, and no salt or preservatives. Serve this savory mole sauce over chicken, beef, pork, and with a side of rice or beans.
This mole sauce brings some major flavor without sodium. This Mexican sauce is made from simmered vegetables and spices, and great for your next dinner!
In a large saucepan, heat the olive oil on low. Add the onion and garlic, and sauté for 6 to 7 minutes until they begin to soften.
Add the remainder of the ingredients to the pot and stir well. Increase heat to high and bring to a boil. Reduce heat to a simmer, cover, and cook for 30 minutes until tortillas have completely softened.
Using an immersion blender, or a standing blender (being careful to transfer the sauce in small batches), blend on high until the sauce is thick.
Pour over cooked meats, or use as a marinade. Enjoy!
